The farm.
Sidama.

Elena went to Sidama to learn how coffee grows where it first grew wild, and stayed. The whole cherries dry on raised beds for up to three weeks, turned by hand every hour, so the fruit sugar soaks into the seed. We roast it as lightly as we dare.
