Light roast
$22The wildest coffee we make. Dried whole in the cherry under the Ethiopian sun.
The easy, everyday coffee the family drinks every morning.
Grown by Tomás Mireles, second generation, at Huehuetenango, Guatemala, 1,700 m above the sea.
Tomás crossed into Guatemala in 1987 with a sack of seed and a copy of his father’s notebook, and found cold, high slopes near the Mexican border that reminded him of home. El Mirador gives a heavy, comforting cup: toasted almond and brown sugar, with a little orange at the end.
Meet the familyRoasted dark, but this is as far as we take it. Sofía stops well before the roast starts talking over the farm.
Built for espresso and for milk. A flat white made with this tastes like the family kitchen.
Scaled for a 12 oz bag. Adjust to taste, then write it down.
The wildest coffee we make. Dried whole in the cherry under the Ethiopian sun.
The farm where it all began. Aurelio’s first slope, still worked by his daughter Rosa.
